Zucchini Fritters : Greg Malouf’s fritters melt in your mouth. A wonderful entrée. I chop some spring onions and add to sour cream with salt and pepper as an accompaniment.
Beetroot Fritters : Returning from the Adelaide Farmer’s Market with some gorgeous organic beetroot, I didn’t know where to start. We tried the Beetroot Fritter recipe on the linked site – absolutely gorgeous! For a healthier option you can lightly spray with oil and grill instead of frying.
Stuffed Capsicums, Zucchinis and Tomatoes : These gorgeous recipes by David Herbert were published in The Australian mag yonks ago, though as you can see they’ve made it to my recipe scrapbook hall of fame (many still aspirational culinary feats). Though these bad boys are tried and tested and are perfect light summer / autumn dishes.
